Weekend make – Chocolate lime madeleines
5oz plain flour
Teaspoon baking powder
Grated lime peel
Juice from lime
Chocolate (plain or milk according to taste)
Madeleine baking tray
Gas mark 4 oven
In a saucepan melt the butter and leave to cool a little.
In a bowl beat the eggs and sugar until thickened.
To the egg mix add the lime rind, melted butter, flour and baking powder. Stir well and leave to chill in a fridge for 20 minutes.
Do 12 madeleines first and cook for 15 minutes. Repeat as this mixture will make about 24/30.
Leave to cool.
In a bowl meal your chocolate (can be plain or milk as per taste)
In another bowl add some icing sugar, a drop of green colouring and lime juice. Make into an icing but not too runny
Dip half of you madeleines into the chocolate and the other half into the lime icing.
