8oz golden caster sugar
7oz Self Raising Flour
1oz cocoa powder
Bar of mint crisp chocolate cut into small cubes
Heat oven to Gas mark 4/5
Line a muffin tin with cases
Cream together the butter and sugar. Add eggs one at a time with a little flour.
Stir int he remaining flour, cocoa and chopped chocolate.
Divide between cases (may make more than 12 but make sure you 3/4 fill each case)
Cook for 15 – 20 minutes.
Leave to cool thoroughly as the chocolate will be melted.
