My weekend bake – Coffee and Pecan Streusel Muffins

 215g of Self Raising Flour
1 teaspoon baking powder
60g Caster sugar
60g finely chopped pecans
1 tablespoon instant coffee
1 tablespoon boiling water
1egg
170ml milk
80ml vegetable oil (I used ground nut as the cakes contain nuts)

STREUSEL TOPPING
30g self raising flour
30g butter
2 tablespoons brown sugar
1 teaspoon of cinnamon (I used mixed spice)
2 tablespoons finely chopped pecans

Heat over to Gas mark 6 – 7 (210 C  415F)

Line a muffin tin.  I used cases but you can grease as they will come out

Into a large bowl put the flour, baking powder. caster sugar and pecans.  Mix the same
In a cup put the coffee and boilking water.  Stir well then add to the flur mix.  Stir in
In a jug put the oil, milk and egg and beat lightly.  Add this to the flour mix and stir in well.

Spoon into the muffin cases.

Make the topping by placing all ingredients (apart from pecans)  into a bowl and rubbing until it forms breadcrumbs.  Add the pecans.   Spoon over the top of the cake mixture.

Place in the over for about 15 minutes.   Leave to cool
