Coconut and sultana cake

120z Self raising Flour
6oz Margarine
6oz Sugar
2 eggs
1/4pint milk
2oz dessicated cocnut
6oz sultanas

Preheat over to gas mark 4

Line an 8inch spring tin

Into a large bowl put the sugar flour and margaring and rub together until breadcrumbs

add fruit and coconut and stir well

add an egg at a time and mix well then add enough milk to make a dropping consistency with the cake mix.

Pour into the tin and bake for about 1 hour – 1 1/2 hours.

Leave to cool then cut and serve
