Heat your oven to Gas Mark 4 180C 350F
Peel and slice 1 large bramley apple and place in a pan with 2oz of sugar and a little water. Boil until soft.
Line and grease a 9inch loose bottomed quiche tin.
In a bowl put 125g of unsalted butter and 90g of sugar. Beat until smooth and creamy. Add one egg. Beat again. The gently add 1/2 teaspoon of cinnamon or mixed spice, 90g of plain flour and 40g of self raising flour. Pour into your lined quiche tin and cook for 15/20 mins or until golden in colour.
Remove from oven and cover with the prepared stewed apple.
In a bowl put 2 egg whites and whish until firm. Gradually add 125g of sugar and keep whisking keeping mixture firm. Pour onto the top of the apple. Sprinkle with some ground almonds.
Bake in the oven until golden on the top. Serve warm or allow to cool and serve with whipped cream.
